Vineyard Information

Trinity Oaks 2007 Cabernet Sauvignon is vinified from a blend of 50% coastal grapes from the Monterey county growing region and 50% from the Lodi region (San Joaquin County), California's largest premium winegrowing area.

Winemaking

After a 10-day fermentation in stainless tanks, the wine was aged in American and French oak to round out and soften its rich, black cherry and currant flavors.

Tasting Notes

This wine exhibits delicious aromas of black cherry and currant with notes of green olive, cedar, dried herbs, and vanilla. Rich and medium in body, with smooth, supple tannins, the flavors suggest cherry, cassis, and nutmeg spice. Expressing true Cabernet Sauvignon varietal character,the wine will pair well with braised and roasted meat dishes such as pot roast, prime rib, crown roast of pork or short ribs and the most hearty pasta and poultry recipes.
